I always feel that Summer is on its way when I make my first jam of the season.... and that was today!
I finally had enough homegrown Rhubarb! As anyone who grows rhubarb will know not having enough is a rarety as its grows prolifically for most of the year! But at this time of year the Rhubarb is especially tender and delicious, perfect for Rhubarb and Lemon jam. Always my first jam of the year and one of my favourites. It's perfect on toast for breakfast as its zesty and certainly wakes up your tastebuds!
Then to top it all off and make me feel even more summery... we spotted the first Swallow of the year! So they say one swallow doesn't make a summer.... but it certainly feels like its getting closer every day! :o)
